ZUCCHINI OMELET

2 eggs
1/2 teaspoon mushroom powder
salt, to taste
freshly ground pepper, to taste
high heat oil (grapeseed or sunflower)
1/2 zucchini, julienned
a dash of cooking wine

Beat eggs well. Add mushroom powder to the eggs and mix together.

Pour the eggs into a very hot, oiled wok. (Wok should be slightly smoking.)

After 10 seconds, add the zucchini.

Swirl eggs quickly and flip.

Add a splash of wine at the end, serve piping hot.
