ZUCCHINI OMELETTE

Eggs are a wonderful source of protein and support Kidney and Stomach function as well as nurture the blood. Most importantly, eggs contain all the energetic "Message of Life".

 2 eggs
 1/2 teaspoon of salt
 1/4 teaspoon of mushroom powder
 1/2 small zucchini
 dash of wine
 2 teaspoons of oil

Cut the zucchini into julienne strips.

In a bowl beat the eggs until frothy.

Add salt, mushroom powder and zucchini.

Coat the bottom of the wok with oil.

Add the egg and zucchini mixture. Allow it to cook for just under a minute, then lightly scramble or flip so the egg mixture remains in a circle.

Add a splash of wine and serve.
