ZESTY CELERY-ROOT STIR-FRY

As root vegetables, celery root and carrot are associated with the Earth, and help support your Stomach function. The warming ginger supports your Stomach as well as your Lung.

Yields1 Serving
 2 Tablespoons of olive oil
 1 rounded Tablespoon of finely minced ginger
 1/4 teaspoon of salt
 1/4 teaspoon of fresh ground pepper
 1/2 cup of diced carrot
 1/2 cup of diced celery root
 1/2 stack of leeks, chopped
 1/2 cup of diced apple – preferably red
 2 Tablespoons of fresh squeezed orange juice
 1 teaspoon of orange zest
 Handful of toasted pine-nuts

Heat a wok or heavy skillet and add oil.

When the oil is warm, add the ginger, salt, and pepper. Heat until the ginger is heated through, but not browned.

Add the carrot, leeks and celery root (please note that the dices should all be about the same small size).

Add the apples. Then add orange juice and zest. Stir-fry for a couple of minutes until the vegetables are tender but still a bit crunchy. Stir in nuts if desired.

Serve over steamed greens, rice, or Chinese barley.
