WHITE FISH WITH FENNEL, TOMATO AND HERBS
Fish is a great way to give your Kidney a boost and support the functioning of your entire body.
If you have left overs, try adding them to a pot of boiling water and enjoy a fish soup!

Place the fish filets on a parchment paper-lined baking sheet.
In a wok lightly cook fennel slices in 1/4 teaspoon of oil for 1 minute.
Add tomatoes, herbs, salt and pepper to wok and mix.
Top the fish with this veggie mixture. Drizzle with olive oil.
Bake in a 425 degree oven for 10 minutes, or until fish flakes easily with a fork.
Drizzle with balsamic vinegar and bread crumbs, optional.
Optional cooking tip-short cut style. Slice fennel very thin and place in a mixing bowl with the tomatoes, herbs, salt and pepper. Mix well and spoon on top of fish. Drizzle with olive oil.
