This watermelon salad is a refreshing meal that supports the Stomach, Heart, Lung and Liver. Mint adds a refreshing twist!

Several Chunks of watermelon
1 Cucumber, diced
Mint leaves, chopped
⅓ Red onion, sliced
1 Lime
Optional: Add pine nuts and coconut flakes

Place all the ingredients in a bowl except the lime.
Squeeze the juice of 1/2 lime over the watermelon salad.
Toss and enjoy!
