WATERMELON DELIGHT
This favorite summertime fruit has a cool essence that can help decrease internal heat, relieve thirst, and assist the body in releasing toxins.

1/2 watermelon, cut close to the rind in bite-sized chunks (white and red parts)
4 Scallions, whites only, chopped
1/2 teaspoon salt
1 teaspoon mushroom seasoning
1 Tablespoon dark soy sauce
1 Tablespoon grapeseed oil

Heat the oil in a wok.

Add a dash of salt, the scallions, and the watermelon chunks.

Stir these ingredients for a minute or so. Then add the mushroom seasoning.

Stir another minute and add the dark soy sauce.

Stir-fry until the watermelon is translucent.

Serve warm on a platter.
