VEGETABLE WATERMELON ZING

This light and refreshing vegetable mix is great year round but in summer most veggies are fresh. The essence of this dish supports Heart and Stomach function. An unusual addition to this dish is watermelon. It adds a refreshing lift to your veggies.

 2 Tablespoons oil
 1 sweet potato, sliced into 1/4 inch wedges
 1 fresh tomato, cut into small chunks
 1/2 cup watermelon, cubed
 1 scallion, chopped into 1/2 inch pieces
 3 slices fresh ginger, sliced into 1/2 inch pieces
 1 yellow pepper, cut into bite-sized pieces
 1 teaspoon mushroom powder
 1/2 Tablespoon rice wine
 salt, to taste

Heat oil in a wok or frying pan. When hot, add potato slices. Cook until slightly tender-not mushy.

Add tomatoes, watermelon and salt. Cook for 1 minute.

Add mushroom powder and gently toss.

Add yellow peppers, scallions, and ginger. Toss until tender about 2 minutes. Add wine and serve.
