TOMATO SALAD

By marinating the tomatoes and onions in vinegar, the salad will have a sour taste. In Chinese medicine, a sour taste resonates with the Liver and can aid in improving digestion.

 3 large tomatoes cut into bite-sized chunks
 1/2 vidala onion sliced
 1 teaspoon of salt
 1 tablespoon of red wine vinegar or apple cider vinegar
 3 tablespoons of olive oil
 Cracked pepper to taste
 Handful of cilantro, mint or basil leaves

In a large bowl add the tomatoes, onions, salt, vinegar.

Toss gently.

Add oil, cilantro, mint or basil.
Option: Add 1/2 can of chickpeas
