 1 whole trout
 salt (enough to rub on fish)
 peel from 1 tangerine, chopped
 rosemary sprigs, small-sized pieces
 2 whole scallions, washed and trimmed
 1/2 cup cooking wine (many authentic Chinese recipes use rice wine)

Clean the trout and rub well with the salt, both inside and out.

“Stuff” the trout with the tangerine peel, rosemary sprigs and scallions.

Tie the fish with cooking string to hold the ingredients and flavors within during cooking.

Add the wine and marinate for several hours or overnight.

Bake until the trout is flaky but not overcooked.
