SWEET POTATO NOODLE FRY

In TCM, sweet potatoes are considered beneficial for spleen and stomach health. They are believed to support digestion and help alleviate symptoms of indigestion. Mushrooms enhance the body's resistance to pathogens and promote overall immune function.

Yields1 Serving
 1 bundle of sweet potato noodles
 6 mushrooms, diced
 2 scallions, cut into thin strips
 1 celery stalk, cut into thin strips
 1/2 red pepper, sliced thin.\
 3 teaspoons of cooking Oil
 3 tbsp Soy Sauce
 1 tsp Shaoxing wine
 ½ tsp Sugar
 ½ tsp White pepper (optional)
 Optional: Sprouts

Boil sweet potato noodles, rinse with cold water and set aside

Whisk soy sauce, Shaoxing wine, sesame oil, sugar, and white pepper, and set aside.

Heat oil in wok or saute pan; and then add scallions and mushrooms. Cook for one minute then add the celery and red pepper.

Add the celery and red pepper. Toss until slightly tender.

Add the noodles, and soy sauce mixture and toss another 2-3 minutes.

Top with sprouts and serve!
