SWEET EGG OMELETTE

This delicious meal can be amended with any veggies or fruit you like. We love canned peaches for their sweetness and texture.
Together this dish supports the Kidney, Stomach and Liver.

Yields1 Serving
 3 eggs, beaten
 ½ onion, cut into slivers
 4 slices of canned peaches
 Parsley, cilantro or spicy green peppers
 2 teaspoons of oil
 1 teaspoon of salt
 ¼ teaspoon of mushroom seasoning
 Splash of wine

In a large bowl, beat the eggs and add the onion slices, peaches and parsley (or green of choice).

Add the salt, and mushroom seasoning and beat one more time.
Set aside.

In a hot wok add the oil. Allow the oil to become very hot then add the egg mixture.

Gently stir until some of the liquid is dried. Then toss so the bottom of the omelette can cook.
Hint-if you can't toss, then gently fold the egg and cover the wok for 1 minute.

Splash with wine and serve.
