SWEET AND SOOTHING SOUP

This soup is great for breakfast, lunch or dinner, and it is so simple to make! Yellow mung beans support Stomach function and help guide toxins out of the body.

 5 cups of water
 1 cups of yellow (split bean) mung beans
 1 yellow sweet potato, diced (other varieties tend to get mushy)
 ½ cup of Chinese red dates, rinsed

Bring the water to a boil in a large pot and add the rest of the ingredients.

Allow the soup to boil for one hour.

Serve either hot or cold.
