STUFFED BELL PEPPERS

For a healthy, hearty vegetarian meal, try stuffing peppers with rice and a mixture of your favorite vegetables. Peppers are great to support Stomach function.

 2 bell peppers, cored
 1/4 cup rice
 1 tomato, chopped
 1/3 cup pine nuts
 1 stalk celery, chopped
 Fresh mint, diced
 Salt and freshly ground pepper, to taste

Boil 1/2 cup water. Add the rice and lower the heat to a simmer. Partially cover the rice until the water is absorbed.

When the rice is cooked, add the tomato, pine nuts, celery, and fresh mint. Mix together. Season to taste.

Stuff the peppers with the rice mixture and place in a casserole dish.

Bake at 350 degrees for 20 minutes. Serve warm.
