STACKED SWEET POTATO
Caramelized onions warm the digestive system and support Qi flow, mushrooms strengthen immunity and promote detoxification, while sweet potatoes nurture the Spleen and Stomach, providing grounding energy. Heat the wok and add the oil, salt and onions. Toss for 1 minute then add the mushrooms.
Saute´until tender.
Slice the potato into a 2-3 inch wedge. Top with the onion and mushroom mixture.
Add cilantro on top if desired.
Note: We used a yellow sweet potato but you can use any variety.
