ZUCCHINI AND PEPPERS

Zucchini has a cool essence which makes it a great year round choice for supporting Yin energies. Peppers strengthen the stomach and can improve ones appetite.

 3 tablespoons of oil
 2 garlic cloves, smashed
 1-2 squash, cut on a diagonal
 1 yellow or red pepper, cut into 1 inch chunks
 1 onion, cut into 1 inch slivers
 cracked pepper to taste
 2 teaspoons of soy sauce

To the wok, add the oil and garlic. (do not add salt)

Add the squash and saute for 1 minute.

Add the onions and the peppers and saute for 2 more minutes.
Add the cracked pepper.

Drizzle soy sauce over the vegetables and toss.

Serve over a bed of rice.
