SPICY BARLEY & MUNG BEANS

This breakfast cereal of Chinese barley and mung beans is so good for your digestive system. The chili bamboo shoots, available in most Asian markets, will add a burst of flavor and is also good for digestion. Extra bonus - the spicy flavor supports the lung!

  2-3 cups of boiling water
 1/2 cup Chinese barley
 1/4 cup mung beans
 Chili bamboo shoots

Rinse the barley and mung beans in separate bowls.
To the boiling water, add the barley and stir.

Lower the heat, partially cover the pot and slow boil for 10 minutes.

Add the mung beans. Continue to slow boil for another 20 minutes.

Place in bowls and garnish with the spicy bamboo shoots.

Note: For a more soupy consistency use an increased amount of water.
Cooking times vary depending on the texture you prefer.
