SIMPLE NOODLES WITH VEGETABLE SOUP
This simple noodle soup is a cinch to prepare. Add shrimp and garnish with your favorite fresh herbs for a special meal, or keep it simple, with just the broth, noodles, and greens.
[cooked-sharing]
1 qt. chicken or vegetable stock
Handful of noodles such as rice noodles or mung bean noodles from the Asian market
2 cups spinach or other leafy green, roughly chopped
6-8 frozen cooked shrimp, thawed (optional)
Splash of Chinese rice wine
Salt to taste

Bring the stock to a boil.

Add the noodles, rice wine, and salt to taste.

Once the noodles are cooked, stir in the greens.

Remove from heat once the greens are wilted.

Add the cooked shrimp just before serving.
