SAVORY MUNG BEAN SOUP ITALIAN STYLE

Mild tasting mung beans are a super food! Their many health benefits include their ability to fight inflammation and detox the body. Adding Italian herbs will aid digestion as well as enhance the immune system.

 1 tablespoon olive oil
 ½ onion, diced
 1 carrot, diced
 2 celery stalks, diced
 3 mushrooms, diced
 1 ½ tablespoons Italian seasoning
 ¾ cup mung beans
 6 Cups vegetable broth
 Salt and pepper to taste

Heat oil, add the onion and stir for 2 minutes.

Add the carrot and celery and stir 2 for minutes.

Add the mushrooms and the Italian seasoning, stir briefly.

Stir in the mung beans.

Add the vegetable broth and bring to a boil.

Lower the heat, partially cover the pot, and allow to boil slowly for 45 minutes. Add more broth or water if it is too thick.

Add salt and pepper to taste.
