ROASTED SWEET POTATOES AND APPLES
Sweet potatoes are traditionally good for healthy digestion, as their color and essence (as root vegetables) benefit the Stomach and Spleen, the organs associated with Earth. In this recipe, they are paired with apples and honey, which both support the Lung function. This is a great recipe to enjoy after the fall harvest, the season of the Lung!

Cut the sweet potatoes into 1/2″ thick rounds or wedges.
Place potatoes in a large baking dish with butter, honey, and water. Mix to coat. Arrange potatoes in a single layer.
Bake at 375F for 35-40 minutes, or until the potatoes are tender.
Move the potatoes around the baking dish halfway through baking time.
Cut the apples into 1″ wedges and add them to the baking dish.
Continue baking for 20 minutes more. Serve warm.
