ROASTED EGGPLANT WITH PINE NUTS

Eggplant has a cooling essence and helps to remove heat trapped in the body, and is especially good for harmonizing the Qi of the Liver to aid its function. It can also lower cholesterol and can help you discard excess weight! The pine nuts support Kidney energy, and the plum tomatoes support Heart health.

 1 small eggplant
 5 plum tomatoes, chopped
 1 spring garlic bulb or scallion, diced
 2 Tablespoons of pine nuts
 Salt and pepper to taste
 1 Tablespoon of olive oil
 Juice from 1/3 fresh lemon

Cut the eggplant into 12 wedges.

Salt the wedges and let them sit for 20 minutes.

Then rinse the wedges and pat them dry.

Place the eggplant wedges in a baking dish.

Top with tomatoes, garlic, pine nuts, and salt and pepper to taste.

Drizzle with olive oil.

Bake, loosely covered, at 350 degrees for about 45 minutes.

Remove from the oven and squeeze the fresh lemon juice over the top.

Serve warm.
