FRESH SEASONAL SALAD
Keep it light and simple. Add watermelon or any other fruit to give this dish a nice twist.

½ can of red beans, or bean of choice
½ can of black olives
corn, frozen or off the cob
½ yellow pepper, diced
⅓ sweet oinion, diced
3-4 mint leaves, chopped
1 tablespoon of oil
¼ teaspoon of salt
½ teaspoon of red wine vinegar

Add ingredients 1-6 into a bowl

Next whisk together the remaining ingredients then toss over the salad.
