RED BEAN AND ORANGE SALAD
Red beans in TCM support the Kidneys and nourish blood, while oranges support the Spleen and aid digestion, promoting overall balance.

1 Can of Red Kidney Beans, rinsed
1 Orange, peeled and cut into wedges
Handful of cilantro
¼ Red onion, diced
½ teaspoon of salt
1 Clove of garlic, minced
Heaping tablespoon of rice
1 Lemon
Cracked pepper to taste
Optional: 1/3 cup of chick peas

Add the beans, orange slices, scallion, cilantro, garlic and salt to a bowl and toss.

Add the rice and the juice of one lemon.
Toss then allow to flavors to blend for 5 minutes.
