RADISH PANCAKES

Radishes are great for the digestive system and the Lungs. Radishes can help release mucus from the Stomach and Lungs.
Drinking the juice of the radish is especially good to relieve a cough. Adding pine nuts are good for Kidney function and brain function.

Yields1 Serving
 1/2 daikon radish, grated
 2 teaspoons of salt
 1/4 teaspoon of sugar
 2 scallions, chopped
 1/2 teaspoon of mushroom seasoning
 Black pepper to taste
 Handful of pine nuts or walnuts or almonds
 1 cup of flour
 Optional: Add seaweed and or cilantro
 1/3 cup oil (may need a bit more)

In a bowl, add the radish, salt, and sugar.
With your hands mix well so the water comes out of the radish.
Let stand for 5 minutes.

Next, squeeze the radish so more water comes out.
Pour the water into another bowl and reserve.

Add the chopped scallion, mushroom seasoning, pepper. Gradually add 3/4 cup of flour while continuing to mix.

Add 1 tablespoon of oil.
Mix well. Mixture will be sticky.

If the mixture is too dry add some liquid from the radish juice.
If it's too runny add more flour.

Het your frying pan and add the remaining oil.
If you'd like a crispy pancake add more oil to the pan.

Scoop 1/2 the batter into the frying pan. Flatten the batter and gradually shape the pancake.
Continue to press down with your spatula. Cook for 1 minute hen flip

Continue to press the batter down to keep its shape.
Flip again and continue to pat down.

Be patient. Continue with this process until golden on both sides.
