QUINOA VEGGIE BOWL

 ½ cup of quinoa rinsed
 1 cup of boiling water
 Leftover vegetables
 1 teaspoon of olive oil
 Juice of 1/2 lemon

Rinse the quinoa and add it to the boiling water.
Note: you can use chicken or vegetable broth instead of water.

Allow the quinoa to simmer for 10 minutes or until all the water is absorbed.

Spoon the cooked quinoa into a bowl.

In a saucepan, heat the oil for 30 seconds and add the lemon.
Pour over the quinoa.

Top with your leftover vegetables.
