PEARLED STRING BEANS

String beans resonate with the essence of the Liver. Since they grow on vines, the vines represent the ability to move upward in an unrestricted manner. The pearled onions support your Stomach and Spleen and the pine nuts boost your Kidney energy.

Yields1 Serving
 1 Tablespoon salted butter
1 ½ cup pearl onions, peeled*
 ¼ teaspoon salt
 ¼ cup pine nuts
10 ounces string beans, frozen or fresh
For this recipe, we used the frozen pearl onions from Trader Joes. If pearl onions are not available, substitute ½ yellow onion, chopped.
1

Melt the butter in a saucepan over medium heat. Add the salt and pearl onions and sauté 2-3 minutes. Then add the pine nuts. Mix to coat the nuts in butter.

2

Cover and cook over low-medium heat. Uncover every few minutes to mix onions, until the onions are golden brown, about 15 minutes. If the bottom of the pan browns, just shake the pan to mix the onions.

3

Add string beans and turn the heat down to low. Mix well with a wooden spoon to remove all brown bits from bottom of pan.

4

Cover and cook for about 15 minutes or until the beans are cooked through but still crunchy. Serve warm.
