PEACHY FISH BAKE

Fish is a great source of energy to support healthy Kidney function. Adding fruit give a touch of sweetness which is good for the Spleen and Stomach.

Yields1 Serving
 1 Tops to the celery
 ½ Pound of Cod or Salmon
 1 teaspoon of oil
 ½ teaspoon of salt
 ½ teaspoon of mushroom seasoning
 1 peach, diced
 ½ red onion, diced
 Splash of wine

Preheat the oven to 425 degrees.

To a baking dish add the leafy celery tops and place the fish on top of the leaves.

Sprinkle the oil, salt and mushroom seasoning on top of the fish. Add 1/4 of the peach and onion mixture.

Bake for 10 minutes, uncovered.

After 10 minutes add the rest of the diced peaches and onions on top of the fish and bake for an additional 5 minutes.
