ORZO ARUGULA SALAD

Arugula has a bitter taste which is beneficial to the Heart. By adding the warm orzo, the raw essence of the arugula is somewhat tempered.

Yields1 Serving
 ¼ cup of cooked orzo
 2 cups of arugula
 1 cup of diced watermelon
 ½ red or yellow pepper
 1 tablespoon of oil
 ½ teaspoon of salt
 pepper to taste
 1 teaspoon of balsamic vinegar

Cook the orzo according to package directions. Then strain and place on the side to cool.

In a large bowl, add the arugula, watermelon, scallions and peppers

When the orzo is cool-not too hot rather warm, add to the salad and toss.

In a small bowl whisk together the oil, salt, pepper, and vinegar.
Pour over the salad and mix well.

Optional: Add strawberries and blueberries for an additional zing!
