NUTTY GINGER BARLEY

Chinese barley is one of those simple to store foods that carries a big dose of support for the Stomach and Spleen. By adding ginger there's an extra element of warmth that nurtures the digestive system. In TCM, we say all healing happens first through a balanced digestive system. The seeds and nuts add great Kidney support.

Yields1 Serving
 5 cups of water
 1 cup of Chinese Barley, rinsed
 3 slices of ginger, minced
 1 teaspoon of honey
 1 teaspoon of toasted sesame seeds Optional: Chinese red dates
 Handful of crushed walnuts

Boil the water and add the Chinese barley and ginger. If using red dates, add them now.

Lower to a simmer and partially cover making sure you monitor the water levels.

After 20-30 minutes the barley should be tender.

Add the barley to a cereal bowl and top with sesame seeds, walnuts and honey.
Enjoy!
