LETTUCE SAUTÉ

 

The essence of raw or uncooked foods is cold, which impairs healthy Stomach function. Cooked lettuce is delicious by itself or in soups. In TCM it is known to clear heat, and circulates Qi.

Yields1 Serving
 One head of your favorite lettuce
 Olive or grapeseed oil
 One clove of garlic, sliced
 Salt
 Mushroom powder
 4 green olives, chopped
 Chinese cooking (rice) wine

Slice the lettuce into 1/2-inch strips.

Heat the wok and add the oil, salt, and garlic.

Be careful not to allow the garlic to turn brown.

Add the lettuce, and toss gently for 30 seconds.

Then add the mushroom powder, chopped green olives, and toss gently.

When the lettuce is slightly wilted, add a dash of Chinese cooking wine and serve!
