LENTILS WITH FRIED ONIONS

Build up your energy reserves with this delicious lentil meal. The combo of rice, lentils and onions make this meal flavorful and a complete protein. A great meal to support the Stomach/Spleen and Kidney.

 1 cup of french lentils, rinsed
 ¼ cup of rice
 3 cups of water
 1 teaspoon of salt
 2 onions, sliced thin
 3 tablespoons of sunflower oil

Add the lentils, rice and salt to a pot of hot water. When the water boils, lower to a simmer and cover but crack the lid. Cooking time is about 20 minutes.

Meantime, heat the oil and fry the sliced onions until golden brown.
Spoon onto a plate until the lentils are cooked.

Onions sliced thinkly

Add a teaspoon of the onion oil to the lentils. Do this during the cooking time or just before plating.

When the lentils are tender but not mushy, transfer them to a large plate.
Top with fried onions and serve.

Tip: If the lentils have excess water, simply put them in a strainer before transferring to a plate.
