Preheat oven to 375°.
Spread olive oil on the bottom of a casserole dish.
Top with the oats, using enough oats to cover the bottom of the dish.
Lay the chicken over the oats.
Top the chicken with the cubed fruit and the fresh mint.
Bake for 40 minutes, uncovered.
Raise the oven temperature to 425° and bake for an additional 10 minutes.
This dish tastes even better when reheated the next day!
