GINGER POACHED PEARS

Ginger is considered to have warming properties in TCM. It help stimulate circulation, dispel cold in the body, and promote digestion. Consuming ginger helps to warm the stomach and spleen. Pears are considered to have cooling properties. They are believed to help clear heat and moisten dryness in the body; therefore, known to soothe the Lung and Large Intestine.

 2 cups water
 1 cup sweet dessert wine
 1 piece fresh ginger, 1 inch
 1 cinnamon stick
 1/2 cup brown sugar
 2 tablespoons honey
 4-6 ripe pears, peeled
 1/3 cup slivered almonds

Over medium heat, combine water, wine, ginger, cinnamon, brown sugar and honey, then add the pears.

Allow to simmer 20-25 minutes.

Remove pears to a serving dish.

Continue to cook the liquid for another 15 minutes to reduce to a syrupy consistency.

Pour over the pears and garnish with the almond slivers.
