CARROT AND GINGER SOUP
This soup is a great detoxifier and benefits all the body's organs. Carrots are best known to support eye health, reduce dry heat in the lungs, and moisturize the intestines.

Melt the butter in a heavy large pot over medium heat.
Add onion, and sauté for 4 minutes.
Add the garlic and ginger, and sauté for 2 minutes.
Add salt and pepper.
Add the chopped carrots, tomatoes and lemon peel and sauté 1 minute.
Add 3 cups of water and bring to boil.
Reduce heat and cover partially.
Simmer until the carrots are very tender, about 20 minutes.
Puree the soup with an emersion blender.
Mix in lemon juice.
This soup can be divided into small containers and frozen for future meals.
