FRUITY QUINOA BREAKFAST

1 Cup of cooked quinoa
Salt to taste
Juice of one lemon or orange
1 teaspoon of oil
¼ Cup of chopped cilantro
Handful of goji
2 Walnuts, chopped
1 Clementine

Rinse quinoa and place in a pot of boiling water.
(2 cups of water to 1 cup of quinoa-about 15 minutes or until water is absorbed.)

Meanwhile, in a large bowl whisk together salt, lemon and oil.
Add the herbs to the dressing.

Toss cooked quinoa with dressing and add goji, clementine and walnuts.
