FOUR VEGGIE STIR FRY

 

In TCM, onions are known to help clear phlegm while celery is helpful in reducing blood pressure. and cucumbers help release toxins. Scallions top off this meal with their ability to expel colds and toxins. This simple dish offers numerous healing opportunities.

Yields1 Serving
 2 teaspoons of oil
 1 teaspoon salt
 1 onion, thinly sliced
 1 stalk of celery, thinly sliced
 ½ teaspoon of mushroom powder
 1 cucumber, sliced into thin wedges
 2 scallions, thinly sliced. Reserve the white bulbs.
 Splash of cooking wine.

Heat the wok and add the oil, salt and the white bulb of the scallions.

Add the onions and celery. Toss gently for 2 minutes.
Add the mushroom seasoning.

Add the cucumbers and remaining scallions.
Continue to toss for 1 minute.
Be careful not to overcook the cucumbers.

Add a splash of cooking wine.
Toss and serve.
