ENDIVE AND TOMATO STIR FRY

Yields1 Serving
 2 teaspoons oil (walnut, grapeseed, etc)
 2 heads endive, cut in half lengthwise, then sliced crosswise
 1 plum tomato, chopped
 1 ½ teaspoons minced fresh ginger
 1 clove garlic, minced
 8 ounces mixed mushrooms, sliced (white, baby bella, shiitake, oyster, etc.)
 3/4 teaspoon mushroom seasoning
 salt, to taste
 1/4 teaspoon chili garlic sauce (optional)

Heat oil in skillet or wok over medium-high heat until hot.

Add minced ginger, garlic, and a dash of salt and stir until fragrant (about 30 seconds).

Add mushrooms. Cook until almost soft, for about 2-3 minutes.

Add mushroom seasoning and endive and cook until tender-crisp, 1-2 minutes.

Then add plum tomatoes and stir for another minute.

Add salt to taste and chili garlic sauce, if desired.

Sprinkle with chopped scallions or cilantro, if desired, to garnish!
