
EGGS WITH SALAD
2 Teaspoons of salt
Cracked pepper to taste
2 Tomatoes, diced
1 Can of white beans, rinsed
1 Scallion stalk, diced
1 Teaspoon of butter
23 Eggs, beaten
Optional: Handful of sprouts

In a small bowl add the tomatoes, beans and scallions. Toss with salt and pepper. Set aside.

Heat a frying pan and add the butter then the beaten egg.

Scramble or flip the egg once cooked on one side. Remove from heat and plate.

Top the eggs with the bean mixture.
Add sprouts for a nice crunch!

Another option is to enjoy the salad on the side.
