Print Options:

EGGPLANT SOUP

 2 tablespoons of oil
 2 teaspoons of salt
 ½ onion diced
 1 eggplant, diced (skin on)
 2 cloves of galic
 4 cups of boiling water
 ½ teaspoon of mushroom powder
 handful of cilantro

Heat a sauce pan and add the oil and the salt.
Add the onions and the eggplant. Cook for 2 mintues.

Add the garlic slices.

Cook until the eggplant is slightly tender then place the eggplant mixture in a pot of boiling water.

Add the mushrooms seasoning.
If you'd like to add a grain such as pasta or rice, do it now.

Just before serving, add the cilantro.
