EGG DROP SOUP

Bring 3 cups of water to a boil.
Heat wok, add oil, and salt and half the diced scallions.
Add tomatoes and sauté for 1 minute.
Add mixture to the boiling water.
Add mushroom powder and stir.
In a separate bowl combine 2 tablespoons of water and sweet potato starch.
Slowly stir this mixture into boiling water.
Beat the egg and drizzle into the boiling water.
Add sesame oil and the balance of diced scallion.
Serve hot.
