Yields1 Serving
 1 Tablespoon of oil
 1/2 white onion diced
 2 stalks of celery diced
 1 bay leaf
 1/4 teaspoon ground black pepper
 1/2 teaspoon oregano
 1 cup dried split peas, rinsed and picked over
 4 cups chicken broth or water
 Handful of chopped parsley
 1/4 cup of cooking wine, optional

Heat a large stockpot over medium heat. Add olive oil and salt. When oil is warm add the onions and gently cook until they are translucent.

Then add additional spices and celery and stir gently.

Add peas and broth or water to mixture and bring to a boil.

Then lower the heat and let simmer unit the peas start to break down, about 1 hour.

Mix again and continue cooking until the peas are soft. Add wine and more salt to taste.

Category

For a creamy texture, puree the soup with a stick blender.
For a soup with more texture, add carrots, celery, and potatoes before cooking.
