CUCUMBER MANGO SALAD

Mango and avocado combined with the juice of one lemon will benefit the Stomach, Liver and are great for Heart health.

Ingredients
 3 Persian cucumbers, washed and diced, but not peeled.
 ½ Red onion, finely diced
 1 Mango, peeled and diced
 1 tbsp Olive oil
 Juice of one lemon
 Dash of pepper
 Freshly ground pepper to taste.
 3 Mint leaves minced

Add the cucumbers to a bowl and add the salt. Mix well and let stand for 10 minutes then add the mango.

In a separate bowl add the rest of the olive oil, and lemon juice.
Adjust seasoning by adding a little sugar if needed.
