BLUEBERRY BANANA BREAD

Satisfying as a meal or snack, this bread has a sweet yet sour taste from the blueberries which are great for the Liver and Stomach.

Ingredients
 1 ½ cups all-purpose flour, with extra for dusting the loaf pan
 1 tsp baking soda
 1 tsp fine sea salt
 ½ tsp baking powder
 ½ tsp ground cinnamon
 ½ tsp ground nutmeg
 1 cup sugar
 ½ cup safflower or sunflower oil, with extra grease for the pans.
 2 large eggs, beaten
 2 tsp vanilla extract
 4 overripe bananas (skin is dark and no longer yellow), peeled and slightly mashed
 1 cup fresh blueberries

Preheat oven to 350 degrees F. Grease and flour a bundt cake pan or (2) 9x5x3-inch loaf pans. Set aside.

In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon, and nutmeg.

In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Add the flour mixture and stir just until blended.

Stir in the bananas, and fold in the blueberries,

Pour the batter in the prepared pans. Bake until a toothpick inserted in the center of the loaf comes out clean, about 1 hour.

Cool for 15 minutes in pan; then remove the loaf and cool completely on a wire rack.
