CRISPY NUTS

Nuts are a wonderful source of protein. We love walnuts for its ability to strengthen Kidney Qi. Almonds support the Lung while the sunflower seeds help the Small Intestines, Stomach and Spleen energy.

Yields1 Serving
 Walnuts, almonds, sunflower seeds or nuts or your choice
 1/3 cup of raisins
 1/3 cup of sugar
 1/2 teaspoon of salt
 3/4 teaspoon of cinnamon
 2 egg whites (add a third if you are making more than two pounds of nuts)

Pre-heat the over to 350 degrees.

In a large mixing bowl add all the nuts and raisins.
Then add the sugar, salt and cinnamon.

In a separate mixing bowl, add the egg whites and beat until frothy.

Mix the egg whites with the nuts and blend very well.

In a parchment lines baking sheet, add the nut mixture making sure it's only a single layer deep.

Immediately place in the oven. After 20 minutes, toss the nuts, then continuing baking for another 15 minutes or until golden.
