Creative Harvest Saute
Instead of shopping for specific ingredients, take a little of this and a little of that from your backyard harvest or farmer's market purchase. We used one small eggplant, a handful of cherry tomatoes, four green beans, 1/2 yellow pepper, and a few mushrooms. Be creative!

Add the olive oil and garlic to a pan over medium heat. When fragrant, add the chopped vegetables and allow to cook over low heat.
Season with mushroom seasoning and pepper (or other fresh or dried herbs of your choosing).
Serve over rice or as a sauce over pasta, adding 1/4 cup of the pasta water to thin the sauce.
