CONGEE DELIGHT

Rice in Chinese culture, symbolizes nourishment and abundance. It's often incorporated in meals to maintain balance in the body and mind. The addition of goji berries boosts vitality, improve eyesight, and enhance immune function. Black beans and nuts support Kidney Qi.

Yields1 Serving
 ½ cup jasmine or glutinous rice
 6 cups water
 1 tsp fresh grated ginger
 Topping: Your choice goji berries, black beans, nuts

Simmer rice and water over low heat, stirring occasionally, until porridge-like consistency forms.  (45–60 minutes).

Add the ginger and your favorite topping during the last 10 minutes of cooking.

Tip: Listen to the sound of the rice simmering.  When it's almost done you will notice the simmering sound changing.
