COD WITH FENNEL
In traditional Chinese medicine fish is known to support healthy Kidney function. The combination of fennel and tomatoes gives this dish an additional healing boost. Together the ingredients support Kidney, Liver and Stomach. Fennel's warming effect helps release cold. Make extra as leftovers make a delicious quick soup.
Here's a trick to determine if your fish is fully cooked. Using a chop stick, gently poke the cod to see if it flakes apart. If so, it's done! Fish is an excellent source of protein to support healthy Kidney function. This recipe is part of the Winter Qi Reset

To a baking dish, add the olive oil. Then add the fennel strips.
Place the cut fish on top of the fennel strips.
In a small bowl add the tomatoes, remaining fennel, scallions, mushroom seasoning, salt and sugar.
Mix well.
Add the wine and soy sauce. Mix well then spoon the mixture on top of the fish.
Bake in a 400 degree oven, uncovered for 15 minutes.
Leftovers make a delicious soup! Simply add the leftovers to a pot of boiling water. Allow flavors to mix for 2 minutes. Add cooked noodles or diced potatoes for a more hearty meal. Adjust for saltiness.
