CHICKEN WITH WATERMELON AND SCALLIONS
This dish is so delicious you'll want to double it for leftovers that can be enjoyed in a wrap or over rice.

Place chicken strips in a small bowl and add salt, mushroom seasoning and 1 tablespoon of oil.
Let sit for 15 minutes.
To a heated wok or pan add 1 tablespoon of oil. Do not allow the oil to heat; add the chicken immediately.
Toss until almost cooked.
Remove the chicken from the wok. Rinse wok and add the remaining oil.
When the oil is hot add the watermelon chunks and toss until the melon is slightly heated. Then add the chicken and scallions and wine. Toss for an additional minute or two.
