CHERRY COCONUT PARFAIT WITH MINT & ORANGE
Cherries are highly beneficial for building blood and Heart energy. Orange zest and fresh mint make this an unusually refreshing treat for summer breakfasts.
Cherries are highly beneficial for building blood and Heart energy. Orange zest and fresh mint make this an unusually refreshing treat for summer breakfasts.

Whisk together yogurt, honey, mint, and orange zest.
Scoop 2 Tablespoons of the yogurt mixture into two parfait glasses.
Divide 1/2 cup of cherries evenly between the glasses on top of the yogurt.
Top with granola.
Add another layer of yogurt and the remaining cherries.
Then top with the remaining yogurt.
Garnish each parfait with toasted coconut, a mint sprig, and the reserved cherries.
