BONE SOUP YOUR WAY

Bone soup is good for the Kidneys and strengthens bones. Use the broth in soups or as the liquid for making rice or other grains.

Yields1 Serving
 1 quart of water
 1 tablespoon of salt
 1 pound of raw beef bones
 1 onion

Rinse bones and add them to a pot of boiling water along with the onions and salt.

Lower to a simmer and let cook for 60-90 minutes.

Use this broth to make your own creative soups by adding your choice of vegetables or noodles.

Tip: To draw the full flavor of your vegetable selection out, saute them for 1-2 minutes before adding to the broth.

Some suggestions: leeks, carrots, celery, escarole, spinach, tomato, peas, radish, and beans.
