BEAN SPROUT SAUTE

This recipe calls for soy bean sprouts but you can use any kind of sprout. It's important to rinse the soy beans in warm to hot water before cooking. Soy bean sprouts carry the essence of rebirth and encourage the body to move forward with guts!

Yields1 Serving
 2 tablespoons of oil
 Ginger, handful thinly cut
 1 teaspoon of salt
 1/2 red pepper, cut into strips
 1 bag of bean sprouts, washed and blanched
 1/2 teaspoon of sugar
 1 teaspoon of mushroom seasoning
 Splash of cooking wine
 1 scallion cut into 1/2 inch strips
 1 teaspoon of corn starch

Heat the wok and add the oil , ginger and salt.

Add the peppers.
Toss well and allow flavors to blend for 1 minute.

Add the rinsed sprouts and toss well for 2-3 minutes.

Add a splash of wine and hot sauce if so desired.

Add the sugar, mushroom seasoning and toss. Next add the wine.
Toss well then add the scallions.

Mix the cornstarch with 1/4 cup of cold water.
Make a small well in the center of the sprouts and add the corn starch.
Toss well and serve
